Baked Fish With Scallions and Ginger

- 4 fillets of snapper, grouper or other firm white fish
- 3 tablespoons light soy sauce
- 3 tablespoons dry sherry
- 5 scallions, 2 of which should be thinly sliced crosswise
- 1 teaspoon fresh minced ginger
- 1 clove garlic, peeled and minced
- 1/4 teaspoon sugar
